I told you about freekeh and also faro, well welcome to Teff, the worlds smallest grain. In fact when you see it, it looks like brown sand. It is a native grain of Northern Africa. It derives its name from tff a root word meaning lost, due to its size.
But don’t be fooled by its size. This grain is a powerhouse in nutrients. Extremely high in fiber, iron, protein and magnesium the forgotten mineral. Better yet, it can be consumed by people that are gluten intolerant since it does not contain the a-gliadin-fraction which is what causes reactions to people that need to avoid gluten.
A 1/4 cup of teff provides a whopping 7 grams of protein, 4 grams of fiber and 1 gram of fat with zero sugar! In addition, due to its size, the variety of choices you have to incorporate it into your meal plan is only restricted by your imagination.
Another advantage where size (in this case small) does matter, is that it cooks much faster. This saves time and money!
